Salmon and Spinach Frittata

Ingredients
(Serves 4)
- 8 eggs
- ½ cup cottage cheese
- ½ cup grated cheese
- 1 cup baby spinach chopped
- ½ teaspoon mixed herbs
- 200 grams canned salmon in springwater drained and flaked
- 6 cherry tomatoes halved
Steps
- Preheat the oven to 180 degrees. Grease an ovenproof dish and set aside.
- Whisk the eggs in a medium bowl. Mix in the cheese spinach herbs salmon.
- Pour into the dish and top with sliced cherry tomatoes. Bake in the oven for 25 minutes or until golden and set.
